Weapons I'm using are great shields and great swords combined with the Irithyll Streight sword or another Streight sword as an extra weapon. I have my UltraGreatsword at level 7 Iv put in 30 hours on Demon Souls but im very certain I levelled up wrong in that and now Dark Souls 3 is my next game which iv now played for close to 90 hours. Now I really dig the 30, 45, 55, 70, and 90 levels. Just more activity for invasions. I guess it's important to note that pvp differs among method. Invasions you can get by zone and sl, arena the meta is still 120 (125), and fight clubs will sporadically occur anywhere from around 55 and on. stylepointseso.
Dark Souls 3 may be difficult, but setting up a build around one of these particularly overpowered weapons can help to level the playing field. With relatively low scaling in both Strength and
Focus on getting VIG to 20-24, END to 16-20 and then start levelling STR or DEX depending on the weapon you want to use. This, damage increases are really small at first anyway so you'll gain more benefit from HP/Stamina, I usually level up to 20 VIG by using the souls from Iudex, giant crystal lizard, swordmaster and whatever other mobs/souls
Some people would struggle at sl100 while others would kickass at sl35. My early play thrus I finished in the 120's. but my last play thru ended with me at 80. For every area you go through, you typically gain 10 SLs. So firelink shrine, you'd be at 10, end of high wall, 20, end of undead settlement 30, and so on.
Doesn't matter. Just have a decent Pyro Flame (mine is +6) and black fire orb (I think that's the name). Stand back and toss away. You'll need like 3-4 Ashen flasks, depending on attunement. But if you're far enough away, he can't hit you, but you can hit him. Just use Dragon's Crest shield for his ranged fire attacks or dodge.
